Fufu is the hearty staple of the Togolais diet. It is made from boiled peices of African yam or maniac root and pounded into a gleutony starch to eat with sauces. Sometimes fufu is pounded for two meals in a day. I tried and lasted about 4 minutes and everyone just laughed at me. It takes two people about 30 non-stop-pounding-hard minutes to get it to just the right consistency.
